Our authentic Sofrito de Tomate (or Tomate frito) is made in the El Bierzo province of Leon in the north of Spain. Spanish onions are cooked for hours with plump sun-ripened tomatoes to create a unique and flavourful salsa. This fried tomato sauce is a traditional Spanish base for cooking many dishes, including paellas. It has the flavours of home-cooking found throughout Spain! Presented in a pretty glass jar with cloth bonnet.
